Creativity Where Are Thou? And A Sugar- and Dairy- Free Chocolate Milk Recipe

Elina December, SelfCare

Even with the prompt sometimes my creativity is just absent. I draw and draw and nothing. The image just looks flat and lifeless… Meh… is the better word for it.

And although I felt like that I still pushed on and drawn this illustration. I love hot chocolate. But now I eat sugar and dairy-free it’s a challenge to make a good cup of hot chocolate. This is the recipe I follow:

Ingredients:

  • Coconut milk
  • Cocoa powder (I use unsweetened and pure, no additives)
  • Sweater of choice (if you do sugar-free you can use Stevia or Monkfruit)
  • Tiny pinch of salt

I didn’t put in the amounts because I always wing it. I never ever measure anything when cooking. As you add cocoa powder take taste in between spoonfuls. If you taste the coconut milk and it’s too rich just add boiled water to it.

Then the only task is to combine it in a pan and let it simmer. If you want ‘whipped’ cream: keep an unopened can of coconut milk in the fridge. The cream will separate and you can whip it and scoop dollops of in your chocolate milk.

Today’s ‘cozy’ challenge listening to Christmas music and I’ve been doing it throughout the day.

I’d send you peace, love, and joy in an envelope if I could.
